4 Ingredient Pistachio Salad Recipe

Do you make green foods for St. Patrick’s Day? My mom has a St. Patrick’s Day birthday and our third baby is due on St. Patrick’s Day so we love simple but festive ways to celebrate the day. This easy pistachio pudding salad has long been one of our favorite recipes for that day. If you’ve never tried pistachio salad before, you’ll want to give this easy salad recipe a try!

I have a love for simple salad recipes. Remember my apple snickers salad recipe? It’s one of my favorites. There is something about combining fruit and pudding that make a delicious side salad. That’s why I like this pistachio salad recipe so much.

There are only 4 ingredients in this salad recipe and I love easy recipes! So few ingredients make it a quick recipe to stir together. You can serve it for family or for company and it is sure to be enjoyed.

Even if you are not a fan of nuts or pistachios, this salad is still a good one. The pistachio pudding gives the salad a lovely flavor without being overpowering. There are a couple of tiny nuts from the pudding (which is too many nuts for my toddler son’s taste) but the pistachio is mostly a nice flavor.

As for the marshmallows? It’s the surprise ingredient that make this salad especially appealing for kids. The recipe calls for one cup of marshmallows but I tend to add more than that. I stir the marshmallows in and adjust as I go along, often adding closer to 2 or 3 cups.

I like to mix, store and serve the salad in the same bowl – using a glass bowl like this one. I love this Pyrex covered bowl set so much, I actually have two sets of them!

Ingredients:

1 (20 ounce) can crushed pineapple, undrained
1 (3.4 ounce) package instant pistachio pudding
1 (8 ounce) container Cool Whip
1 cup mini marshmallows (Can add more to taste)

Directions:

In a large bowl, stir together the undrained can of crushed pineapple with the package of pistachio pudding. Stir well until pudding is all mixed in.

Stir in the container of Cool Whip. Add 1 (to 3) cups of mini marshmallows. Stir to completely combine.

Store pistachio salad in the refrigerator until ready to serve. Enjoy this easy, 4 ingredient pistachio pudding salad recipe, with your friends and family.
