Many years ago, my mother tried a new recipe from our handy Taste of Home Quick Cooking cookbooks. For those of you fellow Lutherans, you may remember that these cookbooks were a free benefit from AAL for several years. Remember AAL (now Thrivent)? Yum. Caramel corn! Along with our famous buckeyes, this was one of the Christmas treats that my mother baked each year. Now, I do the same because it is such a delicious treat - and really, very simple. I've tried other caramel corns but unless the popcorn is coated in caramel (like this recipe), it's not caramel corn to me! A while ago, I shared my recipe for wassail. While I love the taste of this delicious warm drink, I don't often prepare a big batch of wassail. The snow was blowing outside and the temperatures were bitterly cold but suddenly, I wanted a Cherry Limeade from Sonic. Some would say it was a pregnancy craving. I love mashed potatoes. Really, who doesn't? And, in my humble opinion, these are the best mashed potatoes that I have ever eaten! These potatoes are incredibly smooth and the cream cheese adds a delicious richness to them.
