Easy Homemade Chili Recipe

Yesterday was cold and rainy. It was a perfect day to come home and enjoy a bowl of homemade chili for dinner, so that is exactly what I did! I consider chili the perfect freezer food. Why? Homemade Chicken Enchiladas

Today's recipe (like the Runzas) comes from my well-used Crown of Life church cookbook. This recipe for homemade chicken enchiladas is from Rosalie Nichelson and has long been one of our family favorites. Not only are these enchiladas delicious, but as I've said before, when you have diced chicken waiting in your freezer, you can make these in a matter of minutes. I found this recipe in Jessica Fisher's lovely cookbook - Not Your Mother's Make-ahead and Freeze Cookbook. I asked for and received this cookbook for Christmas. Grandma’s Everyday Meatloaf

I like meatloaf. It's one of those comfort foods that I find myself craving every now and again. When I do, the only meatloaf I make is my Great Grandma Rathe's recipe from the Meier Family Cookbook. It's a simple meatloaf, but it always comes together so nicely. Plus, the sauce is a nice sweet and tangy touch on the top. Sloppy joes is one of those recipes that everyone makes. I always thought it was funny that sloppy joes (Manwich) came in a can, because it is so simple to make a pot of sloppy joes.
