By Kristen 1 Comment

I like to serve special breakfast recipes to my family and friends so am always looking for easy, delicious recipes everyone will love. On one particular snow day, I stumbled across this easy recipe for homemade scones and decided to give it a try. I had never made homemade scones before and was pleasantly surprised by how easy they were to make. A few simple ingredients and I was intrigued by the addition of yogurt. It turns out that it is the secret to making soft scones. Yogurt. Who would have known? After tasting the scones, warm from the oven, I decided that this recipe was a … Read More...

Super Simple Homemade Granola with Chunks

By Kristen Leave a Comment

I have been on a quest to find the perfect homemade granola recipe for years. I've tried countless recipes but it never turned out exactly how I wanted. After Emma was born, I decided to really work at finding the right simple homemade granola recipe. While my Mom was here, we printed off half a dozen recipes and started experimenting. I adjusted proportions, combined recipes, and tweaked spices. I created a recipe I liked and tried it another half dozen times (with minor variations) to settle upon my perfect simple homemade granola recipe! It really is super simple, just as the recipe … Read More...

Peanut Butter Chocolate Chip Muffins

By Kristen 15 Comments

I'm a chocolate girl. I come by it honestly, as my Mom shared her love of chocolate with me. And yes, my son already loves chocolate, too! I enjoy baking and many times when I bake, I turn to my tried and true chocolate recipes such as this one for peanut butter chocolate mini muffins. Nathan likes to help me bake and he likes stirring these muffins for our breakfast. What better way to start your day with a chocolate recipe for breakfast? Chocolate for breakfast, you might say? I say there's no wrong time for chocolate! These muffins also make a great afternoon snack or a late night … Read More...

Classic Zucchini Bread

By Kristen 5 Comments

If your garden is overflowing with zucchini, then you and I need to talk zucchini recipes! Last year, we didn't plant a garden. This year, we did and my husband (bless his heart) decided to make up for it by planting not one but two zucchini plants. You Midwesteners and fellow gardeners know where this is heading. This year, we have zucchini every time we turn around! Right now, I have another 8 zucchini sitting on my counter. We've been making zucchini scones, zucchini rice, sauteed zucchini, baked zucchini parmesan wedges and of course, lots and lots of zucchini bread. Zucchini bread … Read More...

Homemade Bread Machine Mixes

By Kristen 13 Comments

As some of you know, our extra freezer recently broke. We are replacing it but are waiting a bit to do so, thanks to a hand-me-down freezer that is coming to us from church friends. In the mean time, my freezer space is limited. Last year, I committed to baking bread for our family. It's so easy, very delicious and much more economical than buying bread. At less than $0.50 a loaf, we enjoy the savings and the taste of fresh bread. Here is the bread recipe I typically use.  While I love that bread recipe, it does make two loaves. Typically, we eat one right away and freeze the other for … Read More...

Lightened Up Pumpkin Chocolate Chip Muffins

By Kristen 4 Comments

I have long loved pumpkin chocolate chip bread. Not only do I love it, but my 18 month old son does as well. He's even started helping me stir the batter in the kitchen because it's never too soon to have helpers in the kitchen! Since he and I can happily eat this treat for breakfast every morning, I decided to try my hand at lightening it up a bit. It wasn't a terrible recipe but I knew I could cut some calories. I started with my favorite recipe for pumpkin chocolate chip bread. This is my favorite recipe because it's quick to mix and it tastes delicious. Plus, this recipe is … Read More...
