I saw this brownie truffle recipe on I (Heart) Nap Time and knew it was one I needed to try. It looked to be simple, rich and of course, chocolately!
Not only did the recipe do just as I hoped, but it gave me a chance to use my homemade brownie mix. Go ahead and make these – soon! You’ll thank me for this advice!
1 pan brownies, made according to package directions
4 ounces cream cheese, softened
1 1/2 cups semi-sweet chocolate chips, melted
Bake the brownies according to the package directions (or use homemade mix). Be careful not to over bake. Let the brownies cool.
Once cooled, scoop the brownies into a large bowl and crumble them. If you have any hard edges, leave those in the pan. Enjoy them as a snack! Add cream cheese and stir until combined.
Roll your brownie mixture into truffle size balls. Place on a parchment lined cookie sheet. Place in the freezer for 30 minutes or until firm.
Melt your chocolate in the microwave. Melt in 30 second increments, and stir until smooth. Using a fork, roll the truffle in the melted chocolate. Use a spoon to drizzle chocolate over any parts that are not covered, as necessary. If the chocolate gets thick at times, microwave and continue rolling.
Store the truffles in the freezer and take one (or more) out to eat as desired. They are a great treat for when you need a good dose of chocolate.
These brownie truffles are rich and will satisfy your chocolate cravings. Just thinking about them makes me ready for another one…
