No-Bake Chocolate Oatmeal Cookies

Do you ever find yourself needing a quick dessert or cookie snack for the next day? If you do, this is my go to recipe when I want to make something quick but delicious.

I first made these cookies in Mrs. Eickstead’s second grade class. I remember sitting in the gym, copying the recipe down into my pink spiral notebook. She called them Dinosaur Bones. It was a memorable kid’s kitchen activity resulting in a fun cookie treat.

Even though I now call them by a different name of No-Bake Cookies, these cookies are still good.

No-Bake Chocolate Oatmeal Cookies only have a handful of ingredients and steps.

Ingredients:

1 stick margarine
1/2 cup cocoa
2 cups sugar
1/2 cup milk
3 cup quick oats
1/2 cup peanut butter
1 teaspoon vanilla

Directions:

Melt margarine in pan on stove. Add cocoa, sugar and milk. Cook until bubbles form around sides. Remove from heat. Add remaining ingredients. Drop by spoonful on waxed paper. Cool.

This recipe (when using a medium-sized Pampered Chef cookie scoop, as I do) makes 30 cookies.

Store the cookies in the refrigerator. I recommend layering waxed paper between the layers so the cookies do not stick to one another.

My grandmother used to make something very similar to this when I was young and (I shouldn’t admit it, but) it was the reason I always got eager to visit her!! I will definitely be making these for my family. I can’t believe I had forgotten about these….the chocolate, the peanut butter and the oats….I can actually taste one right now!

    I love them! They are so good and never stay around long. My brother who isn’t a sweets person loves these and will eat a ton. :)
