Gooey Butter Cookies

There’s a recipe we make called Gooey Butter bars. Some people call it St. Louis Butter Cake. It’s made with yellow cake mix and gooey cream cheese. Perhaps I’ll share that recipe sometime. But since, this is a chocolate series, I’m going to share a chocolate variation.

This cookie recipe was recently forwarded onto me from my Mom. I took a look at it and decided to make it for the first time with a chocolate cake mix. It didn’t taste like exactly like gooey butter bars, but it was good. It’s another simple recipe for bite size cookies.

Ingredients:

1 box cake mix
1 egg yolk
1 stick butter, softened
1 package (8 ounce) cream cheese, softened
Powdered sugar

Directions:

Mix cake mix, egg yolk, butter and cream cheese together. Refrigerate for 2 hours.

Roll cookies into bonbon-size balls. Roll in powdered sugar.

Bake at 350 degrees for 13 minutes or until light brown.

I think I would bake them less next time, to make them a little more gooey.

Also, for variety, you could make this recipe with a traditional yellow cake mix – or perhaps a spice cake mix – or any cake mix that you choose. The options are endless!
