In honor of my Mom’s birthday, which just so happens to fall on Saint Patrick’s Day, my stumbles have a clear theme.
When I was home, we used to try and cook green foods for Mom on her birthday. We developed quite the collection over the years. Here are a couple of favorites…and a few new ones I’d like to try.
Love and Olive Oil shared their recipe for Grasshopper Brownies. I’ve tried a couple versions of these delicious mint brownies, all of which are good!
My traditional standby is Pistachio Marshmallow Salad. With only a few ingredients, it has a light and delicious taste. The hint of green color makes it a perfect St. Patrick’s Day treat, too!
She Knows shared a recipe for Green Shamrock Shakes. The McDonald’s ones are delicious, so it would be nice to have a good home version.
If you’re looking for another simple drink recipe, Mindful Meals for Kids shared a very simple recipe for Leprechaun Fizz.
Of course, Taste of Home’s Leprechaun Lime Drink is a delicious themed drink, too!
One year, I made these Shamrock Sandwiches using a recipe I found in one of my Taste of Home cookbooks. Using dried beef, mustard and cream cheese, it makes for a tasty sandwich.
Here’s an oldie but a goodie. Brown Eyed Baker shared her recipe for Artichoke Spinach Dip. I love a good hot dip like this!
I wish I could be cooking a green themed meal for you, Mom! Mikaela and I both wish we could be cooking for you and Kim today. Happy birthday to you, and happy Saint Patrick’s Day to everyone!
